So I was having my son’s 18th birthday party and thought to myself “what can I feed a whole bunch of beer swilling teens?” ……This totally awesome, strikingly eye-catching, festive, pantry staple using and fantastically filling dip of course! Ole`!
Prep time: 10 minutes Cooking time: No minutes $ Low Budget
Serves a mass of drunken teens and a few tipsy parents 😉
2 x 400gm tins of refried beans
1 x 300gm jar of medium heat chunky tomato salsa
1 x 400gm tin of super sweet corn kernels, drained
11/2 cups of grated tasty cheese
1 small red onion, finely diced
3 tbs of chopped fresh coriander
1 red chilli, finely sliced
Juice of 1/2 a lime
2 x packets of plain corn chips
Using a spatula, spread the refried beans evenly over the base of a 30cm pie or flan dish. Pour over the salsa and spread right to the edges and top with grated cheese. Combine the corn kernels, red onion, chilli, coriander and lime juice in a small bowl and sprinkle the mix evenly over the top of the cheese and yep. That’s it. Done.
This is one very easy and very tasty dip. I’ve made it a few times now and have had friends ask me to bring it to their parties – fairly easy on the waistline too (apart from the corn chips and the beer or wine that goes so well with it…).

Must try this! My Mexican dip has a base – block of Philly cheese, carton of sour cream mix together (can add avocado too) Always goes down a treat!!
