I kid you not. This was in the tray and in the oven in 10 minutes! What more could you want on a busy work night? Fat juicy bangers paired with sweet potato and oven roasted tomatoes, a few herbs from the garden thrown in, a whack of garlic and sweet caramelised onion. A weeknight triumph, a wallet triumph……..OK, an all round Em’s Food for Friends triumph!
Prep time: 10 minutes Cooking time: 30 minutes $ Low Budget
Serve 4
8-10 good quality fat sausages of any variety (my big boys eat 3 each and I used spicy italian)
2 small sweet potatoes, halved lengthways and halved again
1 large red onion, peeled but keep roots intact and cut into wedges
8 cloves of garlic, bruised but skin on
12 truss tomatoes, on the vine
A small bunch of thyme, leaves stripped and some sprigs reserved for garnish
A small bunch of rosemary, leaves stripped and a few sprigs reserved for garnish
1 lemon, rind peeled in strips and juice
1/4 cup of extra virgin olive oil
Sea salt and cracked pepper
A crisp green salad to serve
There really is no method to this. It is simply a case of throwing it in and baking. But you can start by preheating your oven to 200°C.
Line a large baking tray with baking paper and place the sausages, sweet potato, garlic, onion, herbs and lemon rind in the tray. Drizzle with olive oil and lemon juice and get your hands in there and rub everything so it is covered in the oil and juice. Sprinkle with salt and pepper and bake in the oven for 20 minutes, turning the sausages once or twice. After 20 minutes pop the tomatoes on top and bake for a further 10 minutes or until they are just starting to split. Remove the tray from the oven and scatter over the reserved herb sprigs and a little drizzle of olive oil. Serve at the table with a nice crisp green salad and some crusty bread if you so desire!
Broke this week and it was looking like cheese toasties for dinner-with not much cheese!. I had all your ingredients in my pantry, and some bangers in the freezer (borrowed some herbs from the neighbours garden). Not only was this dish easier than you described, it tasted awesome and looked amazing. Hi Tracey, I am so happy to hear that you could find something on the website that wouldn’t break the budget and that you all loved. I too survived for many years on a shoestring which helped me become a better cook as I had to get more creative.
