This simple Miso Pork & Green Bean Stir Fry was on the table in literally minutes and was so darn delicious.  As with all Stir Fry, have all your ingredients ready to go (I like to imagine I am doing a cooking show) so that you can quickly throw everything in the wok in the right order.  This recipe uses pork fillet which has the misconception of being expensive but I actually find it very economical as it is thinly sliced, so a little goes a long way.  You could also substitute the pork fillet with chicken breast if pork is not really your bag…..

For the Miso Pork & Green Bean Stir Fry:

Peanut or vegetable oil for frying

600gm of pork fillet, sliced about 1/2cm thick across the grain

3cm piece of ginger, grated

2 garlic cloves, minced

1 long red chilli, finely chopped

1 brown onion, peeled, halved and sliced top to bottom

4 spring onions, washed and cut into 3cm batons, green tops reserved for garnish and sliced thinly on the diagonal

500gm of green beans, topped and sliced in half diagonally (you could also use snow peas, sugar snaps or broccolini)

2 tsp of white miso paste

1/2 a cup of light soy sauce

1/3 cup of mirin

1 tbs of cooking sake

450gm packet of fresh Hokkien Noodles, prepared according to packet instructions

Toasted sesame seeds for garnish

To prepare the Miso Pork & Green Bean Stir Fry, place the miso paste, soy, mirin and cooking sake in a small bowl and whisk until smooth and lump free.

Place the spring onion tops that you have sliced diagonally in a bowl of iced water, they will become super crispy and nice and curly for the garnish.  Drain before serving.

Heat a wok or large fry pan and add a little oil.  When nice and hot, cook the pork, in batches until golden on both sides.  It is important to have the pan super hot and not overcrowd the pan as this will ensure a nice caramelisation on the pork, which adds to the flavour.  Place the pork in a bowl and set aside.  It does not need to be cooked all the way through as it will cook when it is added back to the wok.

Add a little more oil to the wok and fry the onion, stirring continuously, for an even cook.  Add the ginger, garlic & chilli along with the spring onion and green beans and continue stir frying until the beans are glossy and just starting to change colour.  Add the pork, drained noodles and sauce to the wok, continuing to cook on a really high heat and use two wooden spoons to toss the noodles and pork through the vegetables and sauce until everything is well combined and evenly coated in the sauce and the pork is cooked through.

To serve the Miso Pork & Green Bean Stir Fry, divide between four serving bowls and top with the spring onion garnish and a sprinkling of toasted sesame seeds.
