Well, I guess I can’t take all the credit for this Steak Sandwich recipe as it is inspired by the Jamie Oliver “Steak Saaarnie”, however I have put my own flair into it.  Perfect finger food for hanging with mates, watching the footy and slugging back a few thirst quenching ales!!

Serves 4

4 x 200gm rib eye steaks (you could substitute rump for a cheaper option)

1 medium sweet potato, skin on & sliced really thin with a mandolin (or your knife if confident)

2 cloves of garlic roughly chopped

3 sprigs of rosemary

6 sprigs of thyme

2 tbs extra virgin olive oil

2 large red onions, sliced in half and chopped

20gms butter

1/4 cup balsamic vinegar

1/2 cup of red wine

Dijon mustard

2 cups of baby rocket leaves

4 Turkish rolls,  cut in half lengthways

Sea salt and cracked pepper

To prepare the steak, lay them on a large sheet of baking paper, drizzle with oil and scatter over half of the herbs and garlic.  Flip the steaks and do the same on the other side before placing another sheet of baking paper on top and giving the steaks a good beating with a rolling pin.  Season generously with salt and pepper just before cooking.

Heat a pan and melt the butter with a little olive oil.  Fry the onions with a little fresh thyme for around 5 minutes until soft.  Add the balsamic vinegar and wine and allow the liquid to reduce completely, leaving soft, glutinous onions that are a lovely rich red in colour.  Season with salt and pepper. Set aside.

Heat a BBQ grill or plate, nice and hot and cook the sweet potato slices for a couple of minutes either side until tender and lightly charred.  While the grill is still smokin’, cook the steaks  for approximately 3-4 minutes either side for medium rare. Remove from the grill and allow to rest and while resting, cook the bread over the grill for a minute each side until lightly toasted and charred.

When the turkish rolls are ready,  spread one half with an even coating of dijon mustard.  Top with the steak, sweet potato slices,  onions and rocket leaves and serve immediately. The ultimate Steak Sandwich for sharing with your mates!
