I am always looking for healthier lunch box options for the kids, which can be difficult when one likes some things and the other likes other things…….Aaaaaahhhhhgggrrrhhhrhrhhhh!!  I came up with this combination after a two week holiday when the kids ate nothing but junk and I thought it time to be a responsible parent and try and get some good wholesome food into them.  Well here is the answer!  Made with wholemeal flour and natural sweeteners these little gems are packed full of goodness and even better both the brats love em!

Makes 12

You will need:

2 cups of wholemeal  self raising flour
3/4 cup of firmly packed brown sugar
125gm of dried figs, roughly chopped into small pieces
1/2 tsp of ground cinnamon
2 tbs of honey
1 cup of buttermilk
2 eggs
2/3 cup of vegetable oil

Pre heat the oven to 180 degrees celsius.  Line a muffin pan with muffin cases.  I always do this to prevent sticking and you can buy some really groovy ones!

In a large bowl combine the flour, brown sugar, cinnamon and figs.  In a seperate bowl, whisk together the buttermilk, eggs, honey, and oil.  Pour the wet ingredients into the dry and stir to combine.

Spoon the mixture into the patty cases about 3/4 full and bake in the pre-heated oven for 25 minutes.  Allow to cool for 10 minutes before you tuck in……the figs are really hot!

These would be really nice served warm with a little toffee sauce and ice cream……just a thought!
