As you can tell from the appearance of this photo, these Blondies were so emmalicious that one was taken from the plate before I had time to take the photo! Funnily enough it must have been the little known Blondie Thief. I wonder if he is related to the Leftover Pizza Thief ?
Prep time: 5 minutes Cooking Time: 25-30 minutes $ Low Budget
Makes 16
11/2 cups of brown sugar
11/2 cups of plain flour
1/2 cup of melted butter
2 eggs lightly beaten
1 tsp of vanilla extract
1/2 tsp of baking powder
1/2 tsp of salt
1 cup of dark chocolate chips
Preheat the oven to 180°C
In a large mixing bowl combine the sugar, butter, vanilla and eggs. Don’t over mix. Combine the flour, baking powder and salt in a separate bowl and then add it to the wet mix. Stir in the choc chips and mix well to combine. It will be a very thick mixture.
Line a 25cm x 25cm square cake tin with baking paper. Spoon in the mixture and spread with a palette knife so that the mixture gets right into the corners. Bake in the oven for 25-30 minutes or until a skewer in the centre comes out clean (except for a melted chocolate bit!) Allow the Blondies to cool slightly before cutting into 16 equal squares and beware…….guard them with your life!
