Rich, moist, unctuous chocolate brownies with little caramel bursts of flavour are sure to make you Mum/Colleague/Friend/Wife of the year. Go on……try it!
150gm of butter
1 cup of caster sugar
3/4 cup of cocoa
1 tsp of vanilla extract
3 eggs
1/2 a cup of plain flour
2/3 cup of caramel chic chips (if unavailable, white chocolate are equally good…….sort of)
Preheat the oven to 160°C and line a 20cm square cake tin with baking paper. In a medium sized saucepan, on a low heat melt the butter, sugar and cocoa together, stirring continuously until you have a thick paste and the sugar is starting to dissolve.
Spoon into a mixing bowl and add the vanilla and eggs and whisk vigorously to combine. Sift the flour onto the mix, add the caramel chips and mix well with a wooden spoon before pouring into the prepared tin.
Bake in the oven for 30-35 minutes or until just cooked through. Allow to cool in the tin before cutting into squares.
