Marinated in white rum, butter and passionfruit, this “cheeky” dish is the perfect end to a summer meal, topped with delicious vanilla ice cream it is a definite must in the dessert file. Even better……your husband can cook it!
Prep time: 15 Minutes Cooking time: 6 Minutes $ Low Budget
You will need:
3-6 firm but ripe mangoes (depending on how many cheeks per person, I always go for 2)
20gm of butter
2 tbs of brown sugar
1/2 a cup of malibu rum
6 large scoops of vanilla ice cream
To prepare the mangoes, slice the cheeks off each side and score the skin across and down in a grid like fashion. There will be some mango left on the pip but I always give these bits to the kids or even better mango dacquiris!
In a small saucepan melt the butter and add the passionfruit pulp, rum and sugar. Bring to the boil, reduce heat to low and allow to simmer for approx 3-5 minutes until you have a nice buttery syrup. Place the mango cheeks in a bowl and pour the syrup over the top. Cover and allow to marinate for at least 1/2 an hour but you can prepare this hours ahead if you like. The butter will solidify but don’t be alarmed, it will melt the minute it hits the BBQ.
Pre heat your barbie plate to nice and hot. Place the cheeks, flesh side down and cook for approx 3 minutes before turning and cooking on the skin side. Baste the top of the mangoes with any remaining marinade before serving in bowls with a large scoop of vanilla ice cream. Heaven on a plate!
