Want a dessert that literally takes minutes to make, can be made ahead and tastes amazing? Well here it is…..not too sweet, not too sour, a bit of buttery nutty crunch and some very happy guests = winning combo!

Serves 4
4 x pink lady apples, peeled and cut into 8 wedges each
1 punnet of strawberries, washed, topped and halved
A squeeze of lemon
1 tbs of caster sugar
1 tbs of water
1/2 cup of plain flour
1/2 cup of rolled oats
1/2 cup of brown sugar
1/2 cup of pecans, chopped
50gm of butter, melted
Preheat the oven to 180°C
Place the apples, water, sugar and a squeeze of lemon in a medium saucepan and heat until the water comes to the boil and the sugar dissolves. Simmer for approximately 3 minutes, stirring frequently. Remove from the heat and add the strawberries, stir to combine and set aside.
In a medium sized bowl combine the oats, flour, sugar and pecans and give it a mix with your fingers. Pour in the melted butter and rub it with your fingers, making sure that everything is coated in the butter.
Divide the apple mixture between four ovenproof ramekins and top with the crumble mixture. Bake in the oven for 25 minutes or until golden and bubbling. Serve with cream or icecream.
