This is my attempt at trying to make my kids see that you can make 2 minute noodles somewhat healthy.  Ditch the seasoning packet and add a few Asian style flavourings, load it up with fresh veg, a hint of chilli and voile`…… you have a cheap, healthy alternative to an otherwise preservative packed, unsubstantial, far out……I am so thirsty …..somebody get me some water afternoon snack.  Give me my version any day!

Serves 2

2 packets of 2 minute noodles (The baked not fried kind and discard the flavour sachet)

1 clove of garlic

1/2 a red chilli, sliced (optional)

2 tbs of Hoi Sin sauce

1 tbs of oyster sauce

2 tbs of light soy sauce

2 cups of water

12 snow peas, strings removed and halved diagonally

1 small green zucchini, halved and sliced

1 small yellow zucchini, halved and sliced

1 baby bok choy, sliced

2 green onions, sliced diagonally (ends removed)

A handful of coriander leaves

Bring the water, oyster sauce, soy sauce and hoi sin sauce to the boil in a medium sized saucepan and stir well to combine.  Add the garlic, noodles, half the chilli, snow peas and zucchini and simmer for 1 minute.

Add the bok choy, coriander and 2/3 of the spring onion and simmer for a further minute.  Divide among 2 serving bowls and top with the remaining chilli and spring onion.  Simple!
