Smoked Salmon Carpaccio with Lemon Cream




I had 3 hours the other day to come up with a 3 course meal, shop for it and cook it……nothing like working under pressure!  The beauty of this emmalicious starter is that it doesn’t actually require any cooking!  It is all about the presentation (and the taste of course)  and with Jamie Oliver abandon I slapped a packet of smoke salmon gravalax on a board, topped it with a some flash fried capers, crunchy red onion and freshly chopped dill.  To really finish it off some oven warmed ciabatta rolls and a silky lemon cream completed this simple yet elegant dinner party starter……


Prep time:  10 minutes         Cooking time:  2-3 minutes              $$  Medium Budget


Serves 4


1 x 200gm packet of smoked salmon gravalax*  (normal smoked salmon will do)

2 tbs of baby capers

1/2 small red onion, finely chopped

2 tbs of dill, finely chopped

Grated rind of 1 lemon

Juice of 1 lemon

2 tbs of sour cream

Extra virgin olive oil for drizling

Sea salt and cracked black pepper

4 x ciabatta or dinner rolls & lemon cheeks to serve


Heat a small fry pan and add a drizzle of olive oil.  Fry the baby capers for 2-3 minutes or until crispy.  It will spit a lot so use a splatter guard if you don’t want to mess your stove up too much.


Place a sheet of baking paper over a medium sized board or serving platter.  Arrange the salmon slices in a haphazard fashion and sprinkle over the capers, red onion, dill and 1/2 the lemon rind.  Drizzle with olive oil, squeeze over a little lemon juice and season lightly with salt and pepper.


In a small ramekin combine the sour cream and remaining lemon juice and zest.  Drizzle a little olive oil on top, season with pepper and place it on the platter or board.  Serve in the middle of the table with warm crusty bread rolls and be prepared to fight over the last piece!


*  I buy the salmon gravalax from Aldi supermarkets.  It is really reasonably priced……
